Planning dal becomes much easier once you have a simple dry-weight rule. The right quantity depends on whether dal is the main protein-rich dish on the plate or one part of a larger meal with vegetables, curd, rice, roti and other sides.

A useful starting point

For an everyday meal with rice or roti and other dishes, around 50 to 70 grams of dry dal per adult is a practical starting range. For a lighter meal with several sides, you may need less. For a meal centred around dal, you may want more.

Children, appetite and the type of dal will change the quantity, so treat this as a planning guide rather than a fixed rule.

Family quantities

For four adults, roughly 200 to 280 grams of dry dal is usually enough when served as part of a complete Indian meal. For six adults, start around 300 to 420 grams.

If you regularly cook for the same household, note how much is left after two or three meals and adjust your standard measure.

Why different dals give different volume

Split dals such as moong, masoor and toor soften and thicken the cooking liquid. Whole pulses such as rajma or chana expand differently and are often served with more gravy. This means dry weight is more reliable for planning than judging by the final bowl volume.

Water planning

For pressure-cooked split dal, roughly 2.5 to 3 cups of water per cup of dal is a useful starting point for a soft consistency. Add more after cooking if you want a thinner dal. Whole pulses usually need more water and longer cooking.

Avoiding waste

Cook slightly less when the meal includes several sides. If you intentionally cook extra, cool leftovers quickly, refrigerate promptly and reheat only the portion you need. Leftover dal can also be used in dal paratha dough, soups or a thicker next-day tadka.
