Stovetop popcorn is simple once you control three things: the amount of oil, the heat and the moment you remove the pot from the stove. Raw popcorn kernels can turn into a fresh snack in just a few minutes.

What you need

Use a heavy-bottomed pot with a well-fitting lid, popcorn kernels, a small amount of neutral cooking oil and your preferred seasoning. Leave enough empty space in the pot because the popped corn expands dramatically.

Step-by-step method

Add enough oil to lightly coat the base of the pot and place two or three test kernels inside. Cover and heat over medium heat. When the test kernels pop, add the remaining kernels in a single layer, cover again and gently shake the pot to coat them.

Keep the pot over medium heat and shake it occasionally so kernels do not sit in one hot spot. As popping becomes rapid, listen carefully. Once there are a few seconds between pops, remove the pot from the heat.

Why popcorn burns

Burning usually happens when the heat is too high or the pot stays on the stove after most kernels have popped. Residual heat continues cooking the popcorn, so removing the pot slightly early is safer than waiting for every last kernel.

How much should you make?

A small quantity of kernels makes a surprisingly large bowl. Start with a modest batch until you know the capacity of your pot. Avoid overfilling because kernels need room to expand and move.

Seasoning ideas

Classic salt works well, but you can also try black pepper, chilli powder, chaat masala, dried herbs or a small amount of melted butter after popping. Add powdered seasonings while the popcorn is still warm so they cling better.

Keeping it crisp

Serve popcorn soon after making it. Steam trapped under the lid can soften the texture, so once popping is finished, open the lid carefully and transfer the popcorn to a wide bowl.

Frequently asked questions

Why do some kernels not pop?

A few unpopped kernels are normal. Kernel moisture, age and uneven heat can all affect popping.

Can I make popcorn without oil?

Some methods use dry heat or specialised poppers, but for a regular stovetop pot a small amount of oil helps distribute heat more evenly.

Tip: Cooking time can vary with grain age, soaking time, water hardness and pressure-cooker model. Use the timings above as a starting point and adjust to the texture you prefer.
