Kala chana chaat is a simple way to make a flavourful bowl from cooked black chickpeas. The earthy peas bring a substantial bite, while lemon, chopped vegetables and roasted cumin add freshness. It works as a snack, a side dish or a light lunch bowl with another accompaniment.
Ingredients (serves 3–4)
- 1 cup dried brown chana (kala chana)
- 1 small cucumber, diced
- 1 medium tomato, chopped
- 1 small red onion, finely chopped (optional)
- 1 small boiled potato, cubed (optional)
- 2 tablespoons chopped coriander
- 1–2 tablespoons lemon juice
- ½ teaspoon roasted cumin powder
- Chaat masala, black salt or ordinary salt to taste
- Green chilli to taste
Step 1: Soak the kala chana
Pick through the dry chickpeas and rinse thoroughly. Soak in plenty of water overnight, ideally 8–12 hours. Drain and rinse again. Kala chana needs much more cooking than split dal; skipping this stage can make the final texture uneven.
Step 2: Cook until fully tender
Transfer the soaked chickpeas to a pressure cooker or pot, cover with fresh water and cook until completely tender but not falling apart. The exact time depends on your cooker and the age of the peas; allow pressure to release safely and taste one bean before draining. Set the cooked chickpeas aside to cool to lukewarm or room temperature. Refrigerate promptly if preparing far ahead.
Step 3: Chop fresh ingredients
Dice cucumber and tomato into similar small pieces. Finely chop onion and chilli if using. Wash and dry the coriander so it does not make the chaat watery.
Step 4: Toss and season
Mix the cooked chickpeas with the chopped vegetables, potato if using, coriander and green chilli. Sprinkle with roasted cumin, chaat masala and salt. Add lemon juice last and toss just before serving. Taste and balance salt and acidity to your preference.
Three easy variations
- Street-style: Add a spoon of green chutney and a few pomegranate seeds.
- Crunchy: Finish with roasted peanuts if no one has a peanut allergy.
- Warm: Briefly toss cooked chickpeas with cumin and a little oil, then add the fresh toppings off the heat.
Questions people ask
Can I use canned chickpeas?
For a quick version, use cooked, drained chickpeas, but white canned chickpeas will have a different flavour and appearance than kala chana.
Why is my chaat watery?
Drain the chickpeas thoroughly, dry vegetables after washing and add tomato, lemon and salt shortly before serving.
How should I store leftovers?
For the freshest texture, refrigerate cooked chickpeas separately and assemble the salad when needed. Refrigerate assembled chaat promptly and eat within 1–2 days.
