When you need a comforting dal without an overnight soak, red masoor dal is an excellent choice. Dehusked red masoor softens quickly, turns creamy with stirring, and takes on the flavour of a simple jeera-garlic tadka. This version uses everyday Indian kitchen ingredients and can be on the table in roughly 30 minutes.

Ingredients (serves 3–4)

  • 1 cup red masoor dal
  • 3 cups water to start, plus more for consistency
  • 1 small tomato, chopped; 1 small onion, finely chopped (optional)
  • ½ teaspoon turmeric; salt to taste
  • 1 tablespoon ghee or oil
  • 1 teaspoon cumin seeds; 3 garlic cloves, sliced
  • 1 dried red chilli or ½ teaspoon chilli powder
  • A pinch of hing, optional; lemon juice and coriander to finish

1. Rinse the masoor dal

Wash the dal in a sieve or bowl, changing the water until most of the loose surface starch is gone. Unlike whole rajma or chickpeas, split red masoor normally does not require overnight soaking. A brief 10–15 minute soak is optional if convenient.

2. Cook until soft

Add the rinsed dal to a saucepan with about 3 cups of water, turmeric, tomato and onion if using. Bring to a boil, then reduce to a gentle simmer. Stir occasionally and skim off foam if it rises. The dal generally softens in about 15–20 minutes, though the exact time depends on the grain and heat. If the pot gets dry, add a splash of hot water. For a smoother dal, stir vigorously or mash a little with a spoon.

Pressure cooker option: Use enough water for your model and cook for a short cycle, checking the manufacturer's instructions. Red masoor breaks down quickly and can turn very soft under pressure.

3. Make a fragrant tadka

Heat ghee or oil in a small pan. Add cumin and let it crackle for a few seconds. Add garlic and cook on medium-low heat until just golden, not burnt. Add the dried chilli and hing if using. Pour this tadka over the cooked dal carefully, then stir. Season with salt and finish with coriander and a few drops of lemon juice if you like a brighter taste.

How much water should you use?

Begin with around 3 cups per cup of dal for a medium consistency, then adjust. Different pots lose water at different rates, and some people prefer a thin dal for rice or a thicker version for roti. Aim for the texture you enjoy rather than treating the first measurement as fixed.

Make it your own

  • For dal-chawal: Add a little more hot water and serve with steamed rice.
  • For roti: Simmer a few minutes longer so the dal thickens.
  • For a smoky finish: Add a tiny pinch of smoked paprika instead of trying to burn the garlic.
  • For more vegetables: Simmer diced lauki or spinach with the dal until thoroughly cooked.

Troubleshooting

Why is my masoor dal watery?

Let it simmer uncovered for a few minutes, stirring regularly. The lentils will continue to soften and thicken the liquid.

Why is the texture too thick after cooling?

Red masoor thickens as it sits. Stir in warm water while reheating and taste for seasoning again.

Can I make it without onion and garlic?

Yes. Use cumin, hing, tomato, turmeric and a little ginger for a simple no-onion, no-garlic variation.

Storage and leftovers

Cool promptly and refrigerate in a covered container within two hours. Eat refrigerated leftovers within 3–4 days, reheating until piping hot; freeze individual portions if you need longer storage.
