Sabudana khichdi made with tapioca pearls, peanuts and lemon

A good sabudana khichdi should have tender, mostly separate pearls with crunchy peanuts and well-cooked potato. When the pearls clump or turn gummy, the cause is usually too much soaking water, uneven hydration or excessive stirring over heat.

Sabudana pearls differ in size and absorb water differently, so the method matters more than memorising a single water ratio. Here is a practical way to make a reliable batch at home.

Ingredients (serves 2–3)

  • 1 cup sabudana (tapioca pearls)
  • 2 small potatoes, peeled and diced
  • ⅓ cup peanuts, roasted and coarsely crushed
  • 1 tablespoon ghee or oil
  • 1 teaspoon cumin seeds; 1–2 green chillies, chopped
  • Salt or rock salt to taste, depending on your dietary practice
  • Fresh coriander and lemon juice, optional

Step 1: Rinse and soak the sabudana

Rinse sabudana briefly in a sieve or bowl to remove loose starch. Add it to a wide container and pour in just enough fresh water to reach the surface of the pearls, rather than leaving them swimming. Cover and let it hydrate until a pearl can be pressed between your fingers without a hard white centre. This can take several hours, and larger pearls may need longer. If any water is left, drain it thoroughly. Do not begin cooking if the centres are still hard.

Step 2: Check the texture before heating

Loosen the soaked pearls gently with a fork. They should feel hydrated, not wet and slimy. Mix in the crushed roasted peanuts and salt. The nuts add flavour and help keep the pearls from sticking together as much during cooking.

Step 3: Cook the potato first

Heat ghee or oil in a broad non-stick or well-seasoned pan. Add cumin and green chillies. Stir in the diced potato and cook until the pieces are tender. A lid and a small splash of water can help cook the potato, but allow excess moisture to evaporate before adding sabudana.

Step 4: Add sabudana and toss gently

Add the sabudana mixture. Cook over medium-low heat, stirring or tossing gently only as needed, until the pearls look more translucent and are heated through. Avoid continuous aggressive stirring: it breaks the hydrated starch and can make the khichdi sticky. Do not keep cooking long after the pearls are tender.

Step 5: Finish and serve

Turn off the heat and add lemon juice and coriander if using. Serve immediately. If preparing it for a fast, check which ingredients and salt are permitted in your household's fasting tradition.

Why does sabudana khichdi become sticky?

  • Too much water: Drain any leftover soaking liquid before cooking.
  • Under-soaked pearls: Wait until the centre is soft; otherwise the outside can turn gummy while the inside remains hard.
  • Wet pan: Cook away moisture from the potatoes before adding sabudana.
  • Too much stirring: Toss gently and cook only until heated and translucent.

Frequently asked questions

Should I soak sabudana overnight?

Some pearl sizes do well with an overnight soak while others need less time. Use the finger-press test instead of time alone.

Can I make it without peanuts?

Yes. The texture will be a little different. If someone has a peanut allergy, omit the peanuts entirely and prevent cross-contact.

Can leftovers be reheated?

Yes, but the texture is best freshly made. Refrigerate promptly and reheat until fully hot with a little ghee, using a gentle heat and avoiding extra water.
