Comforting Indian khichdi served with spices, illustrating millet khichdi serving style

Whole bajra has an earthy flavour and pleasing texture, making it a satisfying base for a one-pot vegetable khichdi. Compared with rice it takes more time to soften, so soaking and checking the centre of the grain are essential.

Ingredients (3–4 portions)

  • ¾ cup whole bajra
  • ¼ cup yellow moong dal
  • ½ cup diced carrot and lauki, plus a handful of peas
  • 1 tablespoon ghee or oil
  • ½ teaspoon cumin seeds and 1 teaspoon grated ginger
  • ¼ teaspoon turmeric and salt
  • 4–5 cups fresh water to start; more as needed
  • Fresh coriander and lemon for serving

Step-by-step instructions

1. Soak the millet

Rinse bajra thoroughly and soak in plenty of water for 6–8 hours or overnight. Drain before cooking. Its outer structure needs longer hydration than split dal.

2. Prepare the dal and vegetables

Rinse moong dal and cut vegetables into similar small pieces. If you prefer a creamier consistency, briefly soak the moong too.

3. Build the base

Heat ghee or oil in the cooker, add cumin and ginger, then stir in vegetables for a minute. Add the drained millet, dal, turmeric and water.

4. Cook until tender

Pressure-cook following your cooker’s instructions for whole grains. Release pressure safely and taste a grain. It should be tender through the centre, not hard or chalky. Continue cooking with water if necessary.

5. Adjust consistency

Stir gently and add hot water if you want a softer, porridge-like khichdi. Salt to taste, garnish and serve warm.

Practical kitchen tips

  • Whole bajra requires a longer cook than rice; never judge doneness only by cooker whistles.
  • For a softer dish, add more water and simmer briefly after pressure cooking.
  • Refrigerate cooked khichdi promptly and use within 3–4 days; reheat thoroughly.

Frequently asked questions

Can I make this without moong dal?

Yes, but the moong contributes a creamy texture that balances the millet.

Can I use bajra flour?

No. This dish uses whole bajra; flour will produce a very different consistency.
